When I was getting the ingredients together, my family thought I’d lost my mind.

These Homemade Buttermilk Biscuits are the epitome of Southern comfort food. The key to their flaky layers is using cold butter and a simple folding technique, resulting in light, tender, and irresistible biscuits perfect for breakfast, dinner, or slathered with jam.

Ingredients:

Ingredient Quantity
All-Purpose Flour 2 cups
Baking Powder 2 teaspoons
Salt 1 teaspoon
Baking Soda  teaspoon
Unsalted Butter, chilled and sliced 7 tablespoons
Cold Buttermilk  cup
Buttermilk (for brushing) 2 tablespoons

How To Make Homemade Buttermilk Biscuits:

  1. Step 1: Preheat and Prep (10 minutes): Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Step 2: Dry Ingredients (2 minutes): In a large bowl, whisk together the flour, baking powder, salt, and baking soda.
  3. Step 3: Cutting in the Butter (5 minutes): Using a pastry cutter or your fingers, work the chilled, sliced butter into the dry ingredients until the mixture resembles coarse crumbs. The butter pieces should be about the size of peas.
  4. Step 4: Adding the Buttermilk (2 minutes): Create a well in the center of the dry mixture and pour in the cold buttermilk ( cup). Gently mix the wet and dry ingredients with a fork or spatula until just combined. Avoid overmixing; the dough should still be slightly shaggy and sticky.
  5. Step 5: Kneading the Dough (5 minutes): Turn the dough out onto a lightly floured surface. Knead the dough gently a few times, just until it comes together. Pat the dough into a rectangle about 1 inch thick.
  6. Step 6: Folding for Flaky Layers (5 minutes): Fold the dough into thirds like a letter (bring one short end to the center, then fold the other short end over it). Pat it out into a rectangle again. Repeat the folding process 2 more times.
  7. Step 7: Cutting the Biscuits (5 minutes): Use a floured biscuit cutter or a round glass to cut out biscuits. Press straight down to cut clean circles; avoid twisting the cutter to ensure even rising. Gather the scraps, knead gently, and cut out more biscuits until all the dough is used.
  8. Step 8: Brush and Bake (12-15 minutes): Place the biscuits on the prepared baking sheet, making sure they are slightly touching each other. Brush the tops with the remaining buttermilk (2 tablespoons). Bake in the preheated oven for 12-15 minutes, or until they are golden brown on top.
  9. Step 9: Serve and Enjoy! Remove from the oven and let them cool slightly on a wire rack. Serve warm with your favorite toppings or alongside your meal.
