Sweet Potato Rounds with Brie, Cranberry & Pecans

Ingredients:
2 large sweet potatoes, sliced into 1/2-inch rounds (400 g / 0.9 lb)
2 tablespoons olive oil (30 ml)
Salt and black pepper to taste
100 g Brie cheese, sliced or cubed (3.5 oz)
1/4 cup dried cranberries (40 g)
1/4 cup pecans, roughly chopped (30 g)
Optional: 1 tablespoon honey (15 ml)

Directions:
Preheat oven to 400°F / 200°C. Line a baking sheet with parchment paper.
Toss sweet potato rounds with olive oil, salt, and black pepper. Arrange in a single layer on the baking sheet.
Roast for 20 minutes
