Shredded cheddar cheese 1 cup
Sour cream ½ cup
Large eggs, lightly beaten 2
Chopped green onions ¼ cup
Crumbled cooked bacon ¼ cup (optional)

How To Make Mashed Potato Muffins:
Step 1: Preheat Oven and Prepare Muffin Tin: Preheat oven to 375°F (190°C) and spray a muffin tin generously with cooking spray.
Step 2: Combine Ingredients: In a large bowl, combine the mashed potatoes, shredded cheddar cheese, sour cream, beaten eggs, chopped green onions, and crumbled bacon (if using). Season generously with salt and pepper to taste. Mix until all ingredients are thoroughly combined.
