3–4 lbs (1.4–1.8 kg) beef chuck roast, fat cap trimmed
1 packet (1 oz) dry onion soup mix (like Lipton)
1 packet (1 oz) ranch dressing mix (dry powder)
1 box (5.2 oz) au gratin potato mix (like Betty Crocker)—use dry potatoes only, reserve cheese sauce packet
1½ cups water
Optional:
4–6 carrot chunks or baby potatoes (for extra veggies)
Reserved cheese sauce mix (stirred in at the end for richness)
1. Prep the Roast
Pat beef dry with paper towels.
In a small bowl, combine onion soup mix, ranch mix, and dry au gratin potato flakes.
Rub mixture evenly over roast.
2. Assemble in Slow Cooker
Place roast in slow cooker.
Sprinkle any leftover seasoning mix around it.
Pour 1½ cups water around (not over) the roast.
