Peppers, Onions, and Sausage

Sausage, Peppers & Onions Skillet

This quick and flavorful skillet dish combines pre-cooked chicken or turkey sausage with tender onions and bell peppers, all seasoned with Italian herbs and a splash of balsamic vinegar.

Ingredients:

Yellow onions, peeled and sliced into rings – 6 cups (~1½ large onions)
Large bell peppers, sliced about ¼ inch thick – 2 (4 cups)
Fully cooked reduced-fat chicken or turkey sausages – 1 package (12 oz, 4 sausages)
Olive oil, divided – 3 tsp
Dried oregano – ¼ tsp
Dried basil – ¼ tsp
Salt and freshly ground black pepper – to taste
Fresh garlic, minced – 2 tsp
Balsamic vinegar – 1 tbsp
Cooking spray – as needed
Instructions:

Step 1: Soften the Veggies
Place the sliced onions and bell peppers in a large microwave-safe bowl. Microwave on high for 8–10 minutes, until soft.

Step 2: Brown the Sausage
Slice the sausages into thin rounds (~¼ inch thick). Coat a large nonstick pan with cooking spray, add the sausage slices, and cook until lightly browned, about 5 minutes. Stir frequently. Transfer to a plate.Step 3: Sauté the Vegetables
Recoat the pan with cooking spray and add 2 tsp olive oil. Add the microwaved onions and peppers, oregano, basil, salt, and pepper. Cook over medium-high heat, stirring often, until the vegetables are tender and slightly caramelized, about 10 minutes.
Tip: If the pan becomes too dry, add the remaining 1 tsp olive oil and 2 tbsp water.

Step 4: Combine Everything
Add the minced garlic and cook, stirring, for about 1 minute until fragrant. Return the sausage to the pan and stir in the balsamic vinegar. Cook for 2 more minutes until everything is heated through and well combined.

Step 5: Serve
Transfer the sausage, peppers, and onions to a platter. Serve with mustard on the side and toasted bread or rolls, if desired
