Mini Quiche Recipe

**Ingredients:**

 

– **For the Crust:**
– 1 1/4 cups all-purpose flour
– 1/2 teaspoon salt
– 1/2 cup unsalted butter, cold and cut into cubes
– 1/4 cup ice water

– **For the Filling:**
– 4 large eggs
– 1 cup heavy cream
– 1 cup shredded cheese (cheddar, mozzarella, or your favorite)
– 1/2 cup cooked and crumbled bacon or ham (optional)
– 1/4 cup chopped spinach or other veggies (optional)
– Salt and pepper to taste
– Fresh herbs for garnish (optional)

**Instructions:**

1. **Prepare the Crust:**
– In a large bowl, whisk together the flour and salt.
– Add the cold butter cubes and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
– Gradually add the ice water, mixing until the dough comes together.
– Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

2. **Preheat the Oven:**
– Preheat your oven to 375°F (190°C).

3. **Prepare the Filling:**
– In a medium bowl, whisk together the eggs and heavy cream until well combined.
– Stir in the shredded cheese, bacon or ham (if using), chopped spinach or veggies (if using), and season with salt and pepper.

4. **Assemble the Quiches:**
– Roll out the chilled dough on a lightly floured surface to about 1/8-inch thickness.
– Cut out circles of dough to fit into a muffin tin or mini tart pans.
– Press the dough into the muffin cups or tart pans and trim any excess dough.
– Divide the filling evenly among the prepared crusts.

5. **Bake:**
– Bake in the preheated oven for 20-25 minutes, or until the filling is set and the crust is golden brown.
– Remove from the oven and let cool slightly before removing from the muffin tin or tart pans.

6. **Serve:**
– Garnish with fresh herbs if desired and serve warm.
