Hush—keep this kitchen secret quiet! This dish is unbelievably delicious and incredibly easy to make. We find ourselves cooking it all the time.

  • Small corn tortillas – 8
  • Cooked, shredded chicken or beef – 2 cups
  • Shredded cheese (cheddar or Monterey Jack) – 1 cup
  • Ground cumin – 1 tsp
  • Garlic powder – 1 tsp
  • Onion powder – 1 tsp
  • Salt and pepper – to taste
  • Olive oil – 1 tbsp

Instructions:

Step 1: Preheat and Mix Filling
Preheat your oven to 400°F (200°C). In a large bowl, combine the shredded chicken or beef, cheese, cumin, garlic powder, onion powder, salt, and pepper. Stir until everything is evenly mixed.

Step 2: Soften Tortillas
Warm the corn tortillas in the microwave for a few seconds so they become flexible and easier to roll without cracking.

Step 3: Roll Taquitos
Spoon about 2 tablespoons of the filling onto one side of each tortilla and roll them up tightly.
