Here’s What Crab Sticks Are Actually Made Of—and Why They’re Not Quite What You Think

Crab sticks may look and taste like crab, but they are usually made from processed white fish rather than real crab meat. The secret behind their familiar red-and-white appearance is a manufacturing process that transforms ordinary fish into an affordable seafood substitute. Although this may surprise many people, it does not automatically mean the product is unsafe to eat.

Most imitation crab begins as surimi, a paste commonly made from Alaska pollock or other white fish. The fish is minced, washed, and mixed with ingredients such as starch, salt, water, and seasonings. Manufacturers then shape and cook the mixture to create a texture similar to real crab, adding coloring to produce its recognizable appearance. Some products contain small amounts of real crab or crab flavoring, but the ingredients vary depending on the brand.

Despite its unusual production process, imitation crab is widely used because it is inexpensive, convenient, and easy to add to everyday meals. It is commonly found in sushi rolls, salads, and sandwiches, offering a seafood-like taste without the higher cost of real crab. However, its nutritional value is different, so consumers should not assume it provides the same nutrients as genuine crab meat.

The most important precaution is to check the packaging before eating it. People with fish or shellfish allergies should pay particular attention to the ingredient list, since imitation crab may contain fish and sometimes crab-derived ingredients. Proper storage is also essential, especially for refrigerated products. You do not necessarily need to give up your favorite sushi roll, but understanding what imitation crab contains can help you make informed choices about what ends up on your plate.
