Fresh-Baked Lemon Blueberry Treat

This quick bread is wonderfully moist and bursting with flavor, featuring a tender crumb packed with sweet blueberries and brightened with fresh lemon zest, finished with a simple lemon glaze.

Ingredients (Bread):

  • Melted butter – 1/3 cup
  • Sugar – 1 cup
  • Lemon juice – 3 tbsp
  • Eggs – 2
  • All-purpose flour – 1 1/2 cups
  • Baking powder – 1 tsp
  • Salt – 1 tsp
  • Milk – 1/2 cup
  • Grated lemon zest – 2 tbsp
  • Chopped walnuts (optional) – 1/2 cup
  • Fresh or frozen blueberries – 1 cup

For the Glaze:

  • Lemon juice – 2 tbsp
  • Melted butter – 1 tbsp
  • Confectioners’ sugar – 1 cup

Instructions:

Step 1: Preheat & Prep
Preheat your oven to 350°F (175°C) and grease a loaf pan.

Step 2: Mix Wet Ingredients
In a large bowl, beat together melted butter, sugar, lemon juice, and eggs until smooth.

Step 3: Mix Dry Ingredients
In a separate bowl, combine flour, baking powder, and salt.

Step 4: Combine Batter
Gradually add the dry ingredients to the wet mixture, alternating with milk, mixing just until combined.

Step 5: Add Flavor & Mix-Ins
Fold in lemon zest, walnuts (if using), and blueberries, ensuring they’re evenly distributed.

Step 6: Bake
Pour the batter into the prepared loaf pan and spread evenly. Bake for 60–70 minutes, or until a toothpick inserted into the center comes out clean.

Step 7: Prepare Glaze
While the bread bakes, whisk together lemon juice, melted butter, and confectioners’ sugar until smooth.

Step 8: Glaze the Bread
Once baked, let the bread cool slightly, then drizzle the glaze over the warm loaf.

Step 9: Serve
Allow the bread to cool completely before slicing. Enjoy with a cup of coffee or tea!
