Cold water ½ cup

Minced beef 1 lb

Beef suet 2 tablespoons (optional)

How To Make Forfar Bridies (Scottish Hand Pies):

  1. Make the Pastry: In a large bowl, combine the flour and salt. Add the diced butter and use your fingers to rub it into the flour mixture until it resembles coarse breadcrumbs. Gradually add the cold water and mix until the dough comes together. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
  2. Make the Filling: In a skillet, cook the minced beef and onions over medium heat until the meat is browned and the onions are soft. Season with salt and pepper, and stir in the beef suet if using.
