Feta Chicken Salad

This Feta Chicken Salad takes your classic chicken salad to a vibrant, Mediterranean-inspired level. Loaded with crisp veggies, tangy feta, and aromatic herbs, it’s a delightful and refreshing dish perfect for sandwiches, wraps, or simply enjoyed on its own.

Instructions:

  1. Combine Salad Base: In a large bowl, add the 3 cups shredded cooked chicken½ small diced red onion½ diced red pepper, and 3 diced celery stalks. Toss these ingredients gently to combine them.
  2. Prepare Dressing: In a separate small bowl, mix together the ½ cup mayo, ½ cup feta crumbles, 2 teaspoons dried dill, 1 teaspoon dried oregano, ½ teaspoon garlic powder, and ½ teaspoon black pepper. Stir until the mixture is smooth and well combined. Add salt to taste if needed.
  3. Mix & Chill: Spoon the prepared mayo-feta mixture over the chicken and vegetable blend in the large bowl. Mix thoroughly until all the ingredients are evenly coated with the dressing. Cover the bowl tightly and chill the chicken salad in the refrigerator for at least 1 hour. This chilling time is important for the flavors to meld and for the salad to become cold and refreshing.
