Easy Garlic Chicken Stir Fry

This Easy Garlic Chicken Stir Fry is a delicious and quick weeknight meal. Tender chicken and crisp vegetables are cooked in a savory garlic sauce, creating a balanced and flavorful dish that’s a perfect alternative to takeout. It comes together in one skillet and is best served hot over a bed of white rice.


Garlic Chicken Stir Fry

Ingredients:

For the Stir-Fry:

Ingredients: Quantity
Boneless skinless chicken breast, cut into cubes 1 lb
Olive oil, divided 1 tbsp + 1 tsp
Yellow bell pepper, sliced 1
Sliced mushrooms 1 cup
Broccoli florets 2-3 cups
Garlic, minced 4 cloves
Salt and pepper To taste

For the Sauce:

Ingredients: Quantity
Soy sauce 1 tablespoon
Chicken broth ¾ cup
Sugar 1 ½ teaspoons
Sesame oil 2 teaspoons
Cornstarch 2 teaspoons

How To Make Garlic Chicken Stir Fry

  1. Sauté Vegetables: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the broccoli, sliced mushrooms, and yellow bell pepper to the heated skillet. Cook for 5-6 minutes, or until the vegetables begin to become tender. Remove the vegetables from the skillet, cover them, and set aside.
  2. Cook Chicken: Add the remaining 1 teaspoon of olive oil to the heated skillet. Add the chicken breast pieces and cook, stirring occasionally, until the chicken is no longer pink in the center and is cooked through. Season the chicken with salt and pepper to taste.
  3. Make the Sauce: In a separate bowl, combine the soy sauce, chicken broth, sugar, sesame oil, and cornstarch. Whisk until the mixture is smooth and the cornstarch is dissolved.
  4. Combine & Thicken: Return the cooked vegetables to the skillet with the chicken. Pour the prepared sauce over the chicken and vegetables. Stir to coat everything evenly. Cook for 2-3 minutes, stirring constantly, until the sauce has thickened and coated all the ingredients.
  5. Serve: Serve the stir-fry immediately, over white rice if desired.
