- Sauté Vegetables: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the broccoli, sliced mushrooms, and yellow bell pepper to the heated skillet. Cook for 5-6 minutes, or until the vegetables begin to become tender. Remove the vegetables from the skillet, cover them, and set aside.
- Cook Chicken: Add the remaining 1 teaspoon of olive oil to the heated skillet. Add the chicken breast pieces and cook, stirring occasionally, until the chicken is no longer pink in the center and is cooked through. Season the chicken with salt and pepper to taste.
