Ingredient Amount
Milk (1%, 2%, or whole) 2 cups
Yellow cornmeal 2/3 cup (113 g)
Instant yeast 1 ½ tablespoons
Salted butter 1/2 cup (113 g)
Granulated sugar 1/3 cup (71 g)
Salt 1 teaspoon
Large eggs 3
All-purpose flour 5 ½ – 6 cups (781 to 852 g)
Instructions:

Prepare the Cornmeal Mixture:
In a medium saucepan, warm the milk over medium heat until tiny bubbles appear around the edges.
Stir in the yellow cornmeal and cook, stirring constantly, until the mixture thickens and bubbles. It should have the consistency of porridge. Remove from heat and let it cool until lukewarm.
Mix the Dough:
Transfer the cooled cornmeal mixture to a mixing bowl.
Add the instant yeast, salted butter, and granulated sugar. Mix well.
Beat in the eggs until fully incorporated.
Gradually add the all-purpose flour, mixing until a soft dough forms.
Knead and Rise:
Knead the dough on a floured surface for 2-3 minutes until smooth and elastic.
Place the dough in a greased bowl, cover it with lightly greased plastic wrap, and let it rise until doubled in size.
Shape the Rolls:
Punch down the risen dough and divide it into 24 equal pieces.
Roll each piece into a smooth ball and place them on a large, rimmed baking sheet lined with parchment paper, spacing them about an inch apart.
Final Rise and Bake:
Cover the rolls lightly with greased plastic wrap and let them rise again until doubled in size.
Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius).
Bake the risen rolls in the preheated oven for 14-17 minutes, or until they are lightly browned and baked through.
Brush with Butter and Serve:
Remove the rolls from the oven and brush them with melted butter while they are still warm.
Serve the Buttery Fluffy Cornmeal Dinner Rolls fresh from the oven as a delicious accompaniment to any meal.
