Low-Carb Bacon Cheeseburger Casserole

This Low-Carb Bacon Cheeseburger Casserole is a fantastic, savory meal that captures all the classic flavors of a bacon cheeseburger without the bun. It’s a hearty and satisfying casserole with a rich, creamy egg base and a delicious topping of melted cheese, perfect for a keto or low-carb diet.

Ingredients:

Ingredient Quantity
Ground beef 2 pounds
Garlic, minced 2 cloves
Onion powder ½ teaspoon
Cooked bacon, cut into pieces 1 pound
Eggs 8
Heavy whipping cream 1 cup
Salt ½ teaspoon
Ground black pepper ¼ teaspoon
Shredded Cheddar cheese, divided 1 (12 oz) package

How To Make Low-Carb Bacon Cheeseburger Casserole:

  1. Preheat Oven & Brown Beef: Preheat your oven to 350°F (175°C). Heat a large skillet over medium-high heat. Cook the ground beef with the minced garlic and onion powder until it is browned and crumbly, about 5 to 7 minutes. Drain and discard the grease.
  2. Assemble the Base: Spread the cooked beef evenly on the bottom of a 9×13-inch casserole pan. Stir in the cooked bacon pieces.
  3. Make the Egg Mixture: In a medium bowl, whisk together the eggs, heavy cream, salt, and ground black pepper until well combined. Stir in 8 ounces of the shredded Cheddar cheese.
  4. Bake: Pour the egg and cheese mixture over the beef and bacon in the casserole pan. Top with the remaining 4 ounces of cheese. Bake in the preheated oven for 30 to 35 minutes, or until the top is golden brown and the casserole is set.
  5. Serve: Let it cool slightly before slicing and serving. Enjoy!
