Smothered Pork Chops with Potatoes in Gravy

📋 Ingredients (Serves 4)

MAIN INGREDIENTS
4 bone-in pork chops About 1 inch thick
1 tsp salt
½ tsp black pepper
1 tsp paprika
1 tsp garlic powder
2 tbsp vegetable or olive oil
1 medium onion Thinly sliced
3 cloves garlic Minced
3 tbsp all-purpose flour
2 cups chicken broth Low sodium preferred
½ cup heavy cream or whole milk
1 tsp dried thyme or 1 tbsp fresh
2 lbs baby potatoes Halved or quartered if large
2 tbsp butter
Fresh parsley Chopped, for garnish

👩‍🍳 Instructions

1️⃣ Season the Pork Chops

  • Pat chops dry and season both sides with salt, pepper, paprika, and garlic powder.

2️⃣ Sear the Meat

  • Heat oil in a large skillet or Dutch oven over medium-high heat.
  • Sear pork chops for 3–4 minutes per side until golden brown.
  • Remove and set aside.

3️⃣ Cook the Aromatics

  • In the same pan, add sliced onions. Cook for 5 minutes until soft and golden.
  • Stir in garlic and cook for 1 minute more.

4️⃣ Make the Gravy

  • Sprinkle flour over the onions and stir to coat.
  • Slowly whisk in chicken broth until smooth.
  • Add cream, thyme, and butter. Simmer for 5 minutesuntil thickened.

5️⃣ Add Potatoes & Pork Chops

  • Nestle potatoes into the gravy.
  • Place pork chops on top and spoon some gravy over the meat.

6️⃣ Simmer Until Tender

  • Cover and reduce heat to low.
  • Cook for 25–30 minutes, stirring occasionally, until potatoes are fork-tender and pork chops reach an internal temp of 145°F (63°C).

7️⃣ Finish & Serve

  • Garnish with fresh parsley.
  • Serve hot with extra gravy spooned over each plate.
