Place the mozzarella string cheese on a cutting board and slice into bite-sized pieces.
In a medium bowl, whisk the eggs until blended, then add the milk and whisk again until combined.Set up a breading station with three bowls: one filled with flour, one with the egg mixture, and one with Italian bread crumbs.Take a piece of cheese and coat it in the flour, dip it into the egg mixture, then roll it in the bread crumbs until fully covered. Place each coated piece on a plate.
Heat vegetable oil in a medium skillet to about 350°F. To test, insert the handle of a wooden spoon—if bubbles form around it, the oil is ready.
Line a plate with paper towels and set aside.
Carefully add 5–7 cheese bites to the hot oil, keeping them separated. Fry for about 30 seconds, or until golden brown.
Use a slotted spoon to remove the cheese bites and transfer them to the paper towel-lined plate to drain.
Continue frying in batches until all the cheese bites are cooked.
Serve immediately with warm pasta sauce for dipping, or enjoy them on their own.
