Place the mozzarella string cheese on a cutting board and slice into bite-sized pieces.
In a medium bowl, whisk the eggs until blended, then add the milk and whisk again until combined.Set up a breading station with three bowls: one filled with flour, one with the egg mixture, and one with Italian bread crumbs.Take a piece of cheese and coat it in the flour, dip it into the egg mixture, then roll it in the bread crumbs until fully covered. Place each coated piece on a plate.

Line a plate with paper towels and set aside.

Continue frying in batches until all the cheese bites are cooked.
