Scotcheroos

Scotcheroos are a beloved classic for a reason: they are incredibly easy to make, require no baking, and deliver a perfect combination of salty, sweet, and crunchy flavors. These bars are made with a crispy cereal base held together by a peanut butter mixture, all topped with a delectable layer of chocolate and butterscotch.

Ingredients:

Ingredient Quantity
Rice Krispies cereal 6 cups
Creamy peanut butter 1 cup
Granulated sugar 1 cup
Corn syrup 1 cup
Chocolate chips 1 ½ cups
Butterscotch chips 1 cup

How To Make Scotcheroos:

  1. Prepare Pan & Cereal: Grease a 9×13-inch baking dish and set it aside. Add the 6 cups of Rice Krispies cereal to a large mixing bowl and set it aside as well.
  2. Make the Base: In a small saucepan over medium heat, combine the 1 cup of creamy peanut butter, 1 cup of granulated sugar, and 1 cup of corn syrup. Stirring constantly, bring the mixture to a boil, then immediately remove it from the heat.
  3. Combine & Press: Immediately pour the hot mixture over the Rice Krispies cereal and stir until the cereal is evenly coated. Transfer the mixture to the prepared baking dish and use a greased spatula to press it into a flat, even layer.
  4. Make the Topping: Add the 1 ½ cups of chocolate chips and 1 cup of butterscotch chips to a medium-sized microwave-safe bowl. Microwave in 30-second increments, stirring in between, until the chips are fully melted and smooth.
  5. Finish & Cool: Pour the melted chips evenly over the pressed cereal base and spread into an even layer with a spatula. Allow the bars to fully cool and set before slicing and serving.
