My Southern mama passed this to me, and my kids are crazy over it!

Ingredients:

All-purpose flour 2 cups
Granulated sugar 2 cups
Baking soda 1 teaspoon
Salt  teaspoon
Unsalted butter 1 cup
Unsweetened cocoa powder  cup
Coca Cola 1 cup
Buttermilk  cup
Large eggs 2
Vanilla extract 1 teaspoon
Mini marshmallows  cups
Coca Cola Frosting Ingredients:
Ingredient Quantity
Unsalted butter  cup
Unsweetened cocoa powder  cup
Coca Cola  cup
Confectioners’ sugar 4 cups
Vanilla extract 1 teaspoon
Chopped pecans (optional) 1 cup

How To Make Southern Coca Cola Cake:

  1. Step 1: Prep and Preheat: Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Step 2: Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking soda, and salt.
  3. Step 3: Prepare the Cola Mixture: Melt the butter in a saucepan over medium heat. Stir in the cocoa powder and 1 cup of Coca Cola, bringing the mixture just to a boil.
  4. Step 4: Combine Mixtures: Pour the hot cola mixture over the dry ingredients and mix until well blended.
  5. Step 5: Prepare the Wet Mixture: In a separate bowl, whisk together the buttermilk, eggs, and vanilla extract until smooth. Add this to the batter and stir until combined.
  6. Step 6: Fold in Marshmallows and Bake: Gently fold in the mini marshmallows and pour the batter into the prepared baking pan. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Step 7: Prepare the Frosting: While the cake is baking, make the frosting: Melt the  cup butter in a saucepan, and stir in the  cup cocoa powder and  cup Coca Cola. Bring to a boil, then remove from heat.
  8. Step 8: Finish and Apply the Frosting: Gradually whisk in the confectioners’ sugar and vanilla extract until the frosting is smooth. Stir in pecans if desired. Pour the frosting over the hot cake as soon as it comes out of the oven, smoothing it over the top.
  9. Step 9: Cool and Serve: Allow the cake to cool completely before serving. The frosting will set as it cools, creating a sweet glaze.
