Prep the Cucumbers:
- Wash the cucumbers and pat them dry. Peel them if desired, though it’s not necessary for Kirby cucumbers.
- Slice the cucumbers thinly. You can use a knife, mandoline, or spiralizer for different textures.
Optional: Add Red Onion:
- If using red onion, thinly slice it and add it to a bowl with the cucumbers.
Make the Creamy Dressing:
- In a separate bowl, whisk together the sour cream, mayonnaise, chopped dill, lemon juice, salt, and pepper. Taste and adjust seasonings as needed.
Combine and Chill:
- Pour the creamy dressing over the cucumbers and red onion (if using). Gently toss to coat everything evenly.
- Cover the bowl and refrigerate the salad for at least 30 minutes, or up to several hours, to allow the flavors to meld.
