French Onion Meatloaf

This French Onion Meatloaf elevates a classic comfort food into something truly special. It infuses the rich, savory flavors of French onion soup right into the meatloaf, which is then topped with a generous layer of caramelized onions and a decadent, bubbly cheese sauce. It’s a hearty and elegant meal that’s perfect for a family dinner or a special occasion

For the Meatloaf:

Ingredients: Quantity
Ground beef (80/20 blend) 2 lbs
Sweet onions, thinly sliced 3 large
Olive oil 2 tablespoons
Garlic, minced 4 cloves
Worcestershire sauce 2 tablespoons
Beef broth 1 cup
Eggs, large 2
Panko breadcrumbs 1 cup
Fresh thyme, chopped 1 tablespoon
Salt 1 ½ teaspoons
Ground black pepper 1 teaspoon
Dijon mustard 2 teaspoons

For the Cheese Sauce:

Mozzarella cheese, shredded 1 cup
Gruyère cheese, shredded 1 cup
Butter 2 tablespoons
All-purpose flour 1 tablespoon
Milk ½ cup

Step-by-Step Instructions:

  1. Caramelize the Onions: Heat the olive oil in a large skillet over medium heat. Add the thinly sliced onionsand a pinch of salt. Stir frequently and allow them to soften and slowly caramelize, which will take about 25-30 minutes. Add a splash of beef brothoccasionally to deglaze the pan. Once the onions are deeply golden, stir in the minced garlic and cook for another 2 minutes. Set half of the caramelized onions aside for the topping.
  2. Prepare the Meatloaf Mixture: Preheat your oven to 375°F (190°C). In a large mixing bowl, combine the ground beef, panko breadcrumbs, eggs, Worcestershire sauce, Dijon mustard, fresh thyme, salt, pepper, and half of the caramelized onions. Mix gently with your hands or a spatula until just combined. Avoid overmixing, which can make the loaf dense.
  3. Shape and Bake: Transfer the mixture onto a parchment-lined baking sheet and shape it into a loaf. Bake uncovered for 35-40 minutes.
  4. Prepare the Cheese Sauce: While the meatloaf bakes, melt the butter in a small saucepan over medium heat. Stir in the flour to create a roux and cook for 1-2 minutes. Gradually whisk in the milk, followed by the remaining beef broth, and continue to cook until the sauce has thickened. Remove from the heat and stir in the shredded mozzarella and Gruyère until the sauce is smooth and velvety.
  5. Assemble and Broil: Remove the meatloaf from the oven. Top it with the remaining caramelized onionsand generous spoonfuls of the cheese sauce. Sprinkle with a little extra shredded Gruyère for a bubbly crust. Return the meatloaf to the oven and place it under the broiler for 3-5 minutes, or until the topping is golden brown and lightly crisped.
