Classic Forgotten Chicken

This “Forgotten Chicken” casserole is the ultimate weeknight lifesaver! With hardly any prep and a handful of pantry staples, you simply assemble it, pop it in the oven, and let it do its thing. When it’s done, you’re rewarded with tender chicken and perfectly cooked rice in a creamy, flavorful sauce.

Forgotten Chicken Recipe

Ingredients:

INGREDIENT QUANTITY
Minute rice 2 cups
Cream of chicken soup 1 can
Cream of celery soup 1 can
Water 1 can (measured using the soup can)
Boneless, skinless chicken breasts 5 (about 1½ lbs)
Onion soup mix 1 envelope
Butter For greasing the dish
Instructions:

Preheat & Prepare: Heat your oven to 350°F (175°C). Butter a 9×13-inch baking dish generously and set aside.
Mix the Rice Base: In a medium bowl, combine the cream of chicken soup, cream of celery soup, and one can of water (use an empty soup can to measure). Stir in the minute rice until fully mixed.Assemble: Spread the rice mixture evenly in the prepared baking dish. Lay the chicken breasts on top in a single layer, then sprinkle the onion soup mix evenly over the chicken.

Bake: Cover the dish tightly with aluminum foil and bake for about 90 minutes, or until the chicken is fully cooked (165°F / 74°C internally) and the rice has absorbed all the liquid.
