¼ tsp salt
1 cup (2 sticks / 225g) cold unsalted butter, cubed

4 cups fresh or frozen pitted cherries (about 1¼ lbs)
¼ cup (50g) granulated sugar
2 tbsp cornstarch (or arrowroot for GF)
1 tbsp lemon juice
