Shredded cheddar cheese (divided) 1 cup
Sour cream 1 cup
Cream of chicken or mushroom soup 1 can (10.5 oz)
Milk 1/2 cup
Smoked paprika (optional) 1 teaspoon
Salt and black pepper To taste

Step-by-Step Instructions:

  1. Preheat and Prep: Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Cook the Ground Beef: In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is soft. Add the minced garlic and cook for one more minute until fragrant. Season with salt, black pepper, and smoked paprika (if using). Drain any excess fat and set the mixture aside.
  3. Layer the Casserole: Place half of the sliced potatoes in the bottom of the prepared baking dish. Top with half of the ground beef mixture and half of the shredded cheddar cheese. Repeat these layers one more time with the remaining potatoes, beef, and cheese.
  4. Make the Creamy Sauce: In a separate mixing bowl, whisk together the sour cream, cream of chicken/mushroom soup, and milk until the sauce is smooth. Pour this sauce evenly over the top layer of the casserole.
  5. Bake: Cover the baking dish with aluminum foil and bake for 45 minutes. Remove the foil and continue to bake for another 15–20 minutes, or until the potatoes are tender and the top is golden and bubbly. If using, add crispy fried onions or extra shredded cheese during the last 5 minutes of baking.
