These vibrant Cheesy Carrot Flatbreads are a quick and satisfying meal or snack. Tender, finely grated carrots are combined with two kinds of cheese and spices, baked atop a flatbread until bubbly and golden.

Ingredients:

Carrots, peeled and finely grated 2 medium
Shredded mozzarella cheese (or melting cheese) 1 cup
Shredded cheddar cheese 1/2 cup
Chopped fresh parsley or cilantro 1/4 cup (optional)
Garlic powder 1/2 teaspoon
Cumin powder 1/2 teaspoon
Salt and black pepper To taste
Pre-made flatbreads (store-bought or homemade) 4-6
For Topping Quantity
Grated Parmesan cheese 1/4 cup
Fresh arugula or microgreens Optional (for garnish)

Step-by-Step Instructions (Serves 4–6)

  1. Step 1: Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it for easy cleanup.
  2. Step 2: Prepare the Carrot Mixture: In a mixing bowl, combine the 2 grated carrots, 1 cup mozzarella cheese, 1/2 cup cheddar cheese, 1/4 cup chopped parsley or cilantro (if using), 1/2 teaspoon garlic powder, 1/2 teaspoon cumin powder, salt, and black pepper. Stir until evenly mixed.
